Whilst we can no longer claim to cure aliments, the Seppeltsfield Elixir Collection does promise you stimulation and enjoyment. The Elixir Collection is a contemporary conversation for Australian fortified wine, offering young, vibrant and fresh variants. Elixir III Charmingly Caramel, is a modern take on the traditional white port, a popular fortified wine style which sees solely white grapes feature as the varietal backbone. Characterised by two main grape varieties - Muscadelle (the variety of 'Tokay') and Pedro Ximenez - a traditional Spanish variety used as the basis for many sweet Sherry styles.

Winemaker's Comments

A highly aromatic wine, displaying caramel, honeycomb and lifted spirit. The palate weight is light and fresh, whilst maintaining a core of raisined fruit. Enjoy on its own beside the ambience of an open fire, or add a dash of chilled tonic as the Portuguese do for a sun-downer or aperitif.

History

With a proud and priceless legacy dating back to 1851, Seppeltsfield is Australia's iconic wine estate. Seppeltsfield was established by Joseph and Johanna Seppelt just 15 years after the European settlement of South Australia. One of the largest and most modern wineries in the world of its time, Seppeltsfield went on to thrive as an artisan community throughout the early 1900's. Steeped in rich Barossan heritage, the estate is considered a true national treasure which helped shape the history of the Australian wine industry.

Following receipt of fully ripened fruit and fermentation, Charmingly Caramel is fortified using a neutral, clean spirit. The wine is then seasoned in small oak barrels are held in warm stores on the Seppeltsfield property, to increase concentration and lusciousness.
