Tasting Notes

Colour

Vibrant amber with olive-green hue

Aroma

An ethereal high note with creamed honey, vanillin and bourbon-barrel complexities

Palate

A striking balance of mixed peel, roasted nuts, wood smoke, honeysuckle and vibrant acidity

Style

The Paramount DP898 Aged Flor Apera is crafted using the Palomino variety, renowned for its neutral flavour profile and suitability to dryer Apera (previously known in Australia as Sherry) styles. The DP898 gains its complexity through the influence of a layer of yeast (flor), as well through extended barrel maturation. This layer of flor however is later removed, prompting oxidative maturation and the development of subtle nutty and wood aged characters. This style would have traditionally been referred to in Australia as Amontillado Sherry.

Additional Information

There’s a very attractive, dry, grilled-almond edge here with almost flinty freshness and a very clean and clear, rancio note. The acidity is mouthwatering and the saline intensity of dried citrus and grilled almonds is scintillating. Aged Amontillado style here with an average age of 40-plus years. Drink now.

Technical Information

History

With a proud and priceless legacy dating back to 1851, Seppeltsfield is Australia's most iconic wine estate. Seppeltsfield was established in the Barossa Valley by Joseph and Johanna Seppelt just 15 years after the European settlement of South Australia. One of the largest and most modern wineries in the world of its time, Seppeltsfield went on to thrive as an artisan community throughout the early 1900's. Steeped in rich Barossan heritage, the estate is considered a true national treasure which helped shape the history of the Australian wine industry. As a new dawn rises over Seppeltsfield, our passion is to return the estate to its artisan roots and continue the enduring legacy of the Seppelt family.

Winemaking

The Seppeltsfield Paramount Collection is inspired by the traditional Spanish and Portuguese 'fractional blending' method of aging wines. This system delivers high quality and style consistency by blending younger wines into old. After utilising only the very first cut of free-run juice and fortification with a neutral spirit, the DP898 Aged Flor Apera is matured in our Solero nurseries to an approximate average of 48 years, featuring individual components of over half a century in age.
