Seppeltsfield's DP116 is crafted using the Palomino variety, renowned for its neutral flavour profile and suitability to dry Apera styles.
The DP116 is similar to the DP117 dry flor, where a layer of yeast (flor) adds palate complexity in the form of aldehydic characters. This layer of flor however is later removed with the DP116, prompting oxidative maturation and the development of subtle nutty flavours.
A classic expression of aged flor style, retaining the vitality and freshness of the dry flor with added rancio complexity.
